Mom's Swirl Cookies Recipe

Ingredients - 

500g AP Flour

300g Butter

10g Baking Powder

15g Sugar

120g Water

2 tsp Vanilla Extract

1/4 tsp Salt

Fillings - 

Dates:

150g Date spread

50g ground nuts

2 tsp cinnamon

Halva:

150g Halva Spread

Chocolate:

150g Chocolate spread or Nutella 

Serving:

Powdered Sugar (as needed)

PREHEAT YOUR OVEN TO 350F

Preparing the Dough:

-In a stand mixer, add the Flour, Butter, Water, Sugar, Baking Powder, Vanilla & Salt.

-Start mixing on low and gradually increase the speed, knead for 3-5 minutes or until a soft supple and smooth dough forms

-Transfer your dough to a well floured surface and devide it into 3 equal pieces and roll them into balls

Rolling and Filling:

-Taking 1 dough ball at a time, and roll it into a rectangle thats a 1/2 inch thick, repeat for all 3 dough balls

-[DATE FILLING] Grab your date filling, spread it out in an even layer. Then add a layer of your ground nuts and sprinkle your cinnamon over everything. 

-[HALVA FILLING] Grab your halva spread and place a nice and even layer on your dough

-[CHOCOLATE FILLING] Grab any chocolate spread or nutella and place a nice and even layer on your dough

-Start rolling the dough by gently picking up the edge nearest you and slowly rolling up the dough with the spread, repeat for all 3 cookie rolls

Preparing and Baking:

-Gently place the rolls on to your baking sheet. 

-Now, every 1.5 inches make a slit in the cookie roll, it should be about half way through the cookie roll 

-Place it in the center rack of your oven and bake for 30 minutes, rotating the pan half way through the baking time

Serving:

-Grab a small, fine mesh strainer and sprinkle the powdered sugar over thee top of each roll, be generous!
