Kuku Sabzi Recipe

Ingredients:

Sabzi - 2 bunches of each, Chopped

Onion - 2 Medium, grated 

Eggs - 5-6

Matzo Meal/Flour - about 1 TBSP

Salt

Pepper

Instructions:

 

Prep:

-Start preparing the herbs by removing the large stems and soaking them in a bowl of salt water, lie sit for 10 minutes

-Grab your onions and grate them, place them in a large bowl

-Once your herbs soaked for 10 minutes, drain them and rinse off the salt water

-Chop the herbs (not too fine). Please don't use a food processor! Add the to the bowl with the grated onions.

Mixture:

-Grab your large bowl with the onion and herbs and add between 5 & 6 eggs, we want the eggs to bind everything, but we don't want a frittata, mix until well combined

-Now add your matzo meal or flour and mix.

-Add the salt and pepper and give it one final mix!

Frying:

-Prepare a 12" pan or skillet and add about 2" of oil, also prepare a plate lined with some paper-towels

-Start frying by placing a large tablespoonful of your kuku mixture in the hot oil, do this in batches

-Fry for 2 minutes on each side until nice and browned

-Place on your papertowel lined plate to drain

That's it, so easy and simple and a great healthy snack to keep around for the kids or, shh... even yourself!
